Za'atar - the iconic spice blend of the Middle East
A staple spice blend of Middle Eastern cuisine, it has an earthy, citrusy, slightly sour and nutty aroma. It is an everyday seasoning in Israel, Lebanon, Syria, Jordan and Palestine, but is now widespread in Mediterranean and modern gastronomy worldwide.
Classic za'atar consists of three main components:
Dried thyme (or wild oregano) - aromatic, herbal base
Sumac - sour, citrusy character
Roasted sesame seeds - slightly nutty, crunchy texture
From a gastronomic point of view, the complexity of za'atar is given by the following:
Top notes rich in essential oils, green spices
Sour, slightly tart middle tone (sumac)
Roasted, oily, creamy feel (sesame seeds)
This balance makes it an excellent universal spice.
Usage
1. In the classic way:
Mixed with olive oil and eaten with fresh pita or flatbread.
2. In baked goods:
The most famous dish is manakish (a flatbread with za'atar).
